Because they are afraid to get hit. Going to the middle raises the chance that you get hit, especially against teams like Boston, Florida, Washington, etc. So they curl toward the area of least resistance. A move usually reserved for the Panarin's of your team only.
I wasn't really asking the question so much as pondering the rationale behind it. Most of them would give up their first born if it meant they'd never receive a body check.
